Ingredients

  • 2 cups canned or mashed cooked pumpkin
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 2 cups skimmed or reconstituted nonfat dry milk
  • 3 tsp liquid artificial sweetener
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 3 slightly beaten eggs

Instructions

  1. Combine pumpkin, salt, nutmeg, cloves, dry milk, sweetener, cinnamon, ginger, and beaten eggs in a bowl.
  2. Pour the mixture into 9 custard cups or an 8‑inch square pan.
  3. Place the filled cups or pan in a larger shallow pan and add{one inch:} hot water around them.
  4. Bake at 350°F (175°C) for 40 minutes or until a knife inserted in the center comes out clean.
