Ingredients

  • 1 lb. smoked sausage, sliced
  • 1 lb. ground beef
  • 1 medium green pepper, chopped
  • 1/2 cup chopped green onions
  • 5 cloves garlic, minced
  • 1 (28 oz.) can tomatoes, undrained
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup uncooked rice
  • 1 1/2 cups water

Instructions

  1. Cook sausage in a Dutch oven until browned.
  2. Remove sausage and discard drippings.
  3. Add ground beef, green pepper, green onions, and garlic to the Dutch oven. Cook until beef is browned. Drain excess fat.
  4. Add tomatoes, salt, pepper, and cooked sausage to the Dutch oven.
  5. Cover and simmer for 20 minutes.
  6. Add rice and water to the meat mixture.
  7. Cover and cook for an additional 25 minutes or until rice is tender.
