Ingredients

  • 2 cups diced cooked chicken
  • 1 orange, sectioned or canned mandarin oranges
  • 1/4 cup seedless white grapes
  • 1 cup cantaloupe balls (can use frozen)
  • 1/2 cup toasted slivered almonds
  • 1/2 cup homemade mayonnaise
  • 6-8 cantaloupe rings or halves peeled
  • lettuce leaves

Instructions

  1. Combine cooked chicken, orange sections, grapes, cantaloupe balls, toasted slivered almonds, and mayonnaise in a bowl.
  2. Chill the mixture until ready to serve.
  3. Arrange cantaloupe rings or halves on lettuce leaves.
  4. Fill each cantaloupe ring or half with the chicken salad.
  5. Garnish with mint or watercress before serving.
