Summer Somen Salad
Ingredients
- 1 9 oz. Pkg. Somen noodles, cooked according to pkg instructions ⓘ
- 1 cup Lettuce, shredded ⓘ
- 1 cup Fresh Bean sprouts rinsed and drained ⓘ
- 1 Cucumber, peeled, seeded and julienne ⓘ
- 2 eggs seasoned with salt,pepper and sugar.Beat well, Cook omelet style, cool and julienne
- 1 cup Char siu pork or Ham, julienne ⓘ
- 1/2 cup Green onion, cut on the bias ⓘ
- Dressing: ⓘ
- 2Tbs. Sesame oil ⓘ
- 2 Tbs. Sugar
- 1 tsp. salt ⓘ
- 3 Tbsp. Seasoned oil*
- 3 Tbs. Rice vinegar ⓘ
- 2 Tbs. Shoyu(soy sauce) ⓘ
- Seasoned oil: ⓘ
- 1/2 cup peanut oil ⓘ
- 1 Tbs. grated fresh ginger
- 2 cloves Garlic, minced ⓘ
Instructions
- 1. Dressing: Blend all ingredients and refrigerate.
- 2. Put cooked noodles on a serving platter , in small bundles.(grab a bunch of long noodles and arrange each bunch in a round bundle) until you use all the noodles.
- 3. Arrange rest of ingredients over noodles in order given.(at this point you can refrigerate for no more than 24 hours with out the Nori, add nori before serving.)
- 4. Pour dressing on noodles just before serving.
