Ingredients

  • 3 Tbsp. unsalted butter
  • 2 Tbsp. fresh chopped basil or 1 tsp. dried basil
  • 1 c. sliced onion
  • 4 c. sliced yellow squash or zucchini
  • 2 medium tomatoes, diced
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 1 c. grated Cheddar cheese

Instructions

  1. Place butter, onion, squash, salt, pepper, and basil in a 2-quart casserole dish.
  2. Cover and microwave on High for 3 to 5 minutes.
  3. Stir in tomatoes and microwave on High for 2 to 6 minutes.
  4. Top with grated Cheddar cheese and let stand several minutes until cheese is melted.
