Ingredients

  • 6 slices bacon, diced
  • 1 cup corn, cut from the cob
  • 1/4 cup milk
  • 6 eggs, slightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup grated cheese

Instructions

  1. Fry bacon in a 19-inch skillet until crisp.
  2. Drain, reserving the bacon fat.
  3. Return 1 tablespoon of bacon fat to the skillet.
  4. Add corn and cook 8 to 10 minutes or until golden brown.
  5. Stir in milk; simmer 2 to 3 minutes.
  6. Add eggs, salt, and pepper to the skillet.
  7. Cook and stir until the eggs are set.
  8. Serve topped with bacon and grated cheese.
