Ingredients

  • 2 large eggs
  • 2 oz. ham, diced
  • 2 oz. Cheddar cheese, shredded
  • 1 Tbsp. chopped olives
  • 1 to 2 Tbsp. salsa
  • 1 tsp. sour cream
  • 2 Tbsp. water

Instructions

  1. Spray a nonstick omelet pan with nonstick cooking spray.
  2. Beat eggs with water until well mixed.
  3. Pour the egg mixture into the pan.
  4. Apply low heat to the pan.
  5. Put a cover on the pan.
  6. When the omelet is firm, place ham, olives, salsa, and two-thirds of the cheese on one half of the omelet and fold over.
  7. Sprinkle the remaining cheese on top of the folded omelet.
  8. Cover the pan until the cheese has melted.
  9. Place the omelet on a plate and garnish with sour cream.
