Erica's Choice Salad is a layered, fresh vegetable salad with creamy mayonnaise, crisp bacon, and cheese, perfect for light gatherings or elegant sides.

Instructions
- Wash and dry all greens: lettuce, escarole, romaine, and endive.
- Place one-third of the mixed greens in a bowl.
- Dot with two tablespoons of mayonnaise and distribute one-third of the sliced onion.
- Sprinkle with one teaspoon of sugar, a dash of salt and pepper.
- Add one-third of the cooked peas and one-third of the julienne Swiss cheese.
- Repeat the layering process two more times with the remaining greens, mayonnaise, onion, sugar, salt, pepper, peas, and cheese.
- Do not toss the salad after layering.
- Cover the salad and chill for at least 2 hours.
- Crumble the cooked bacon.
- Just before serving, top the salad with crumbled bacon.
- Toss the salad gently to combine flavors and serve.
