Erica's Choice Salad is a layered, fresh vegetable salad with creamy mayonnaise, crisp bacon, and cheese, perfect for light gatherings or elegant sides.

Ingredients

  • 1 head lettuce
  • 1 head escarole
  • 1 head romaine
  • 4 heads endive
  • 1.5 cups cooked peas
  • 6 tablespoons mayonnaise
  • 1 medium onion, sliced
  • 1 cup julienne Swiss cheese
  • 6 slices bacon, cooked
  • 3 teaspoons sugar
  • salt to taste
  • pepper to taste

Instructions

  1. Wash and dry all greens: lettuce, escarole, romaine, and endive.
  2. Place one-third of the mixed greens in a bowl.
  3. Dot with two tablespoons of mayonnaise and distribute one-third of the sliced onion.
  4. Sprinkle with one teaspoon of sugar, a dash of salt and pepper.
  5. Add one-third of the cooked peas and one-third of the julienne Swiss cheese.
  6. Repeat the layering process two more times with the remaining greens, mayonnaise, onion, sugar, salt, pepper, peas, and cheese.
  7. Do not toss the salad after layering.
  8. Cover the salad and chill for at least 2 hours.
  9. Crumble the cooked bacon.
  10. Just before serving, top the salad with crumbled bacon.
  11. Toss the salad gently to combine flavors and serve.
