Ingredients

  • 4 cups chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons water
  • 1 egg
  • 1/4 cup dry white wine
  • fresh pepper to taste
  • 1 cup cooked brown rice

Instructions

  1. Bring chicken broth to a boil.
  2. Reduce heat slightly and simmer until reduced to about 3 cups.
  3. Remove from heat; stir in lemon juice.
  4. In a separate bowl, combine water, egg, and 1/2 cup of the cooled chicken broth.
  5. Slowly pour the mixture back into the remaining broth, stirring constantly.
  6. Add white wine, cooked brown rice, and pepper to taste.
  7. Cook over low heat for 8 to 10 minutes or until the mixture just begins to boil.
  8. Remove from heat immediately and garnish with onion and lemon slices.
