Ingredients

  • 1 cup biscuit mix
  • 1/2 cup shredded American cheese
  • 1/4 cup milk
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 clove garlic
  • 2 tablespoons cooking oil
  • 2 tablespoons all-purpose flour
  • 1 teaspoon sugar
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (16 oz.) can tomatoes, cut up
  • 2 cups cooked meat, cubed
  • 1 1/2 to 2 cups cooked vegetables
  • 1 teaspoon instant chicken or beef bouillon

Instructions

  1. Stir together biscuit mix and shredded American cheese until well combined.
  2. Add milk to the biscuit mixture and stir until smooth.
  3. On a floured surface, roll the dough into a 5-inch circle.
  4. Cut the dough into 6 wedges and set aside.
  5. In a large skillet, heat cooking oil over medium heat.
  6. Add chopped onion, green pepper, and minced garlic; cook until vegetables are tender.
  7. Stir in all-purpose flour, sugar, salt, and pepper.
  8. Add canned tomatoes, cooked meat, cooked vegetables, and bouillon; simmer until heated through and flavors meld.
  9. Spoon the stew into a serving dish.
  10. Arrange the biscuit wedges on top of the stew.
  11. Bake in a preheated oven at 375°F (190°C) for about 15-20 minutes, or until biscuits are golden brown.
