Ingredients

  • 1 c. margarine
  • 1 Tbsp. sugar substitute
  • 2 eggs
  • 1 tsp. vanilla
  • 2 c. all-purpose flour
  • 2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1 c. chopped dates
  • 1 c. unsweetened applesauce
  • 1 c. chopped pecans

Instructions

  1. Cream margarine, sugar substitute, eggs, and vanilla until smooth.
  2. In a separate bowl, sift together flour, baking soda, cinnamon, and cloves.
  3. Gradually add the dry ingredients to the creamed mixture, mixing well.
  4. Fold in chopped dates, unsweetened applesauce, and chopped pecans.
  5. Pour the batter into a greased tube or loaf pan.
  6. Bake at 325°F (163°C) for 30 minutes or until a toothpick inserted in the center comes out clean.
