Ingredients

  • 2 packages (4 servings each) orange-flavor gelatin
  • 2 cups boiling water
  • 1 (8 oz.) container pineapple yogurt
  • 1/4 cup cold water
  • 1 (8 oz.) can crushed pineapple in juice
  • 1 cup coarsely grated carrots

Instructions

  1. Dissolve the orange-flavor gelatin in boiling water.
  2. Measure 1 cup of the gelatin and chill until slightly thickened.
  3. Blend the thickened gelatin with the pineapple yogurt.
  4. Add cold water to the remaining gelatin and then mix in the crushed pineapple with juice and grated carrots.
  5. Pour the gelatin mixture into a 5-cup bowl or dish and chill until set but not firm.
  6. Spoon the yogurt mixture over the gelatin in the dish.
  7. Chill until firm, at least 4 hours before serving.
