Ingredients

  • 1 lb sliced bacon
  • 14 eggs
  • 1 1/3 cups cottage cheese
  • 1 (8 oz) can crushed pineapple, drained
  • 1 teaspoon vanilla
  • parsley (optional)

Instructions

  1. Cook bacon until crisp; drain and set aside 2 tablespoons of drippings.
  2. Crumble the cooked bacon.
  3. In a large bowl, beat the eggs.
  4. Add crumbled bacon, 2 tablespoons of bacon drippings, cottage cheese, crushed pineapple, and vanilla to the eggs.
  5. Pour the mixture into a greased 11 x 7 x 2-inch baking dish.
  6. Bake uncovered at 350°F (175°C) for 40 to 45 minutes.
  7. Garnish with parsley before serving.
