Ingredients

  • 2 c. shredded carrots
  • 2 c. shredded red cabbage
  • 1 orange, peeled
  • 6 oz. container low-fat lemon or orange yogurt
  • 1/8 tsp. salt
  • 6 Tbsp. dry roasted peanuts
  • 1/2 c. drained mandarin orange sections

Instructions

  1. In a large bowl, combine shredded carrots, shredded red cabbage, mandarin orange sections, and peeled orange segments.
  2. Add the low-fat lemon or orange yogurt and sprinkle with salt.
  3. Mix well until all ingredients are evenly coated.
  4. Top with dry roasted peanuts and gently toss again before serving.
