Ingredients

  • 2 medium zucchini
  • 1 medium onion
  • vegetable oil
  • salt
  • pepper
  • 2 eggs
  • 1/2 tsp. finely chopped fresh parsley
  • 2 Tbsp. grated Parmesan cheese

Instructions

  1. Wash and dry the zucchini. Cut off the ends and cut into 2-inch long, 1/2-inch wide strips.
  2. Saute the chopped onion in a little vegetable oil until soft, but not brown.
  3. Add the zucchini, salt, and pepper to the onions and cook until tender, uncovered, on medium heat.
