Instructions

  1. Bring water and coconut milk to a boil.
  2. Stir in rice and ginger, then cover.
  3. Reduce heat to low and simmer for 20 minutes until liquid is absorbed.
  4. Transfer rice to a bowl and remove the ginger.
  5. Add pineapple, toasted shredded coconut, and minced cilantro to the rice and stir to combine.
