Ingredients

  • 1 cup sugar
  • 1 cup oil
  • 4 eggs
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 can pie filling (blueberry, cherry, etc.)

Instructions

  1. Beat eggs until lemon colored and creamy.
  2. Add sugar slowly and beat for 1 to 2 minutes.
  3. Add oil and beat for an additional 1 to 2 minutes.
  4. Add dry ingredients (flour, baking powder, salt) and beat for 1 minute.
  5. Spread half of the batter into a greased 9 x 13-inch pan.
  6. Pour the pie filling over the batter.
  7. Spread the remaining batter on top of the filling.
  8. Sprinkle 3/4 cup brown sugar and 3/4 teaspoon cinnamon on top.
  9. Bake at 350°F for 30 minutes or until done.
