Ingredients

  • 15 oz. can salmon, drained
  • 3 Tbsp. butter, melted
  • 3 large eggs, beaten
  • 6 saltine crackers, crumbled
  • 3/4 cup buttermilk
  • 1/2 tsp. baking soda

Instructions

  1. Preheat oven to 350°F and grease a 1-quart loaf pan.
  2. In a medium bowl, shred the drained salmon with a fork.
  3. Add melted butter and beaten eggs to the salmon and mix until well blended.
  4. Stir in crumbled saltine crackers.
  5. In a small glass measuring cup, mix buttermilk with baking soda, then stir into the salmon mixture and blend.
  6. Spoon the mixture into the prepared loaf pan.
  7. Bake for 30 minutes until set.
