Ingredients

  • 1 1/2 lb. ground beef
  • 2/3 cup evaporated milk
  • 1 egg
  • 3 Tbsp. onion-mushroom soup mix
  • 1/2 cup cornflakes
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 3 Tbsp. brown sugar
  • 1/2 tsp. dry mustard
  • 3 Tbsp. catsup

Instructions

  1. In a bowl, mix the ground beef, evaporated milk, egg, onion-mushroom soup mix, cornflakes, salt, and black pepper.
  2. Shape the mixture on the roast rack in a 2-quart oblong dish.
  3. Score the top of the meatloaf with diagonal 1/2-inch valleys.
  4. Combine brown sugar, dry mustard, and catsup.
  5. Spoon and spread the mixture over the top of the meatloaf.
  6. Microwave uncovered on High for 12 to 14 minutes, rotating the dish once.
  7. Remove from microwave and cover with waxed paper.
  8. Let stand for 10 minutes before serving.
