Ingredients

  • 5 cups fresh celery, cut into 1-inch slices
  • 1 (5 oz.) can water chestnuts, sliced
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 (10 1/2 oz.) can cream of chicken soup
  • 2 teaspoons chicken flavored bouillon granules (optional)
  • 1/4 cup diced pimiento or 1/2 bell pepper, diced
  • 1/2 cup slivered almonds
  • 1/2 stick melted oleo
  • 1/2 cup bread crumbs

Instructions

  1. In a saucepan, combine the celery, water, water chestnuts, and salt. Simmer for 8 minutes, then drain.
  2. Place the cooked vegetables in a mixing bowl.
  3. Add the cream of chicken soup, melted oleo, bouillon granules, and diced pimiento or bell pepper; mix well.
  4. Transfer the mixture into a greased 1 1/2 quart casserole dish.
  5. Sprinkle with bread crumbs and top with slivered almonds.
  6. Bake at 350°F (175°C) for about 20-25 minutes until heated through and golden on top.
