Ingredients

  • 16 oz. can no salt green beans, drained
  • 16 oz. can yellow wax beans, drained
  • 10 oz. package frozen English peas, thawed
  • 1 cup chopped green pepper
  • 1 cup thinly sliced purple onion
  • 2 oz. jar diced pimento, drained
  • 1 tsp. minced fresh garlic
  • 3/4 cup white vinegar
  • 1 Tbsp. vegetable oil
  • 1/2 tsp. salt

Instructions

  1. Combine green beans, yellow wax beans, thawed peas, chopped green pepper, sliced purple onion, drained pimento, and minced garlic in a large bowl.
  2. In a small saucepan, combine vinegar, vegetable oil, salt, and pepper; bring to a boil.
  3. Remove from heat and stir in sugar substitute.
  4. Pour the dressing over the vegetables and toss gently to combine.
  5. Cover and chill for 3 hours, stirring occasionally.
  6. Drain before serving.
