Supreme Bean Salad
A vibrant and crunchy bean salad featuring green beans, yellow wax beans, peas, and fresh vegetables, dressed with a tangy vinegar and oil dressing, perfect for picnics and potlucks.
Ingredients
- 16 oz. can no salt green beans, drained
- 16 oz. can yellow wax beans, drained ⓘ
- 10 oz. package frozen English peas, thawed ⓘ
- 1 cup chopped green pepper
- 1 cup thinly sliced purple onion
- 2 oz. jar diced pimento, drained ⓘ
- 1 tsp. minced fresh garlic ⓘ
- 3/4 cup white vinegar ⓘ
- 1 Tbsp. vegetable oil ⓘ
- 1/2 tsp. salt ⓘ
Instructions
- Combine green beans, yellow wax beans, thawed peas, chopped green pepper, sliced purple onion, drained pimento, and minced garlic in a large bowl.
- In a small saucepan, combine vinegar, vegetable oil, salt, and pepper; bring to a boil.
- Remove from heat and stir in sugar substitute.
- Pour the dressing over the vegetables and toss gently to combine.
- Cover and chill for 3 hours, stirring occasionally.
- Drain before serving.
