Swedish Doughnuts

Ingredients

  • 2 eggs
  • 1 c. sugar
  • 2 c. cold mashed potatoes with butter and milk
  • 3/4 c. buttermilk
  • 2 tbsp. butter melted
  • 1 tsp. vanilla or almond extract
  • 4 1/2 c. all purpose flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 2 tbsp. ground nutmeg
  • 1/8 tsp. ground ginger
  • oil for deep fat frying
  • additional sugar, optional

Instructions

  1. In a mixing bowl, beat eggs and sugar.
  2. Add the potatoes, buttermilk, butter and vanilla.
  3. Mix well.
  4. Cover and refrigerate for 1-2 hours on a floured surface, roll dough to 1/2 inch thickness.
  5. Cut with a 1 1/2 inch doughnut cutter.
  6. In an electric skillet or deep fat fryer, heat oil to 375°.
  7. Fry doughnuts, a few at a time for 2 minutes on each side or until browned.
  8. Drain on paper towels.
  9. Roll in sugar if desired.
