Sweet basil carrots offer tender steamed carrots coated in a buttery maple glaze infused with fresh basil, making a vibrant side dish perfect for spring or summer meals.

Ingredients

  • 12 medium carrots, peeled
  • 3 Tbsp. butter
  • 2 Tbsp. pure maple syrup
  • 1 to 2 tsp. fresh basil
  • 1/4 tsp. salt

Instructions

  1. Cut carrots into 1/8-inch slices or run through the slicer of a food processor.
  2. Place them in a vegetable steamer, covered, over boiling water for 10 minutes until tender but not mushy. Remove from heat and set aside.
  3. In a large, heavy saucepan, melt the butter over medium heat.
  4. Add maple syrup, steamed carrots, fresh basil, and salt to the saucepan.
  5. Stir well to coat the carrots thoroughly with the butter sauce and serve.
