Sweet Hot New Potatoes combine tender quartered new potatoes with a creamy, tangy sauce infused with vinegar, Tabasco, and onions, perfect for a flavorful side dish that excites the palate.

Ingredients

  • 1 3/4 lb. new potatoes
  • 2 small onions
  • 2 Tbsp. butter
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 2 Tbsp. all-purpose flour
  • 1 c. milk
  • 1 c. sour cream
  • 1 1/2 Tbsp. white vinegar
  • 1 tsp. Tabasco sauce

Instructions

  1. In a 2-quart glass casserole, combine potatoes and 1/2 cup water.
  2. Cover and microwave on High for 8 to 11 minutes, stirring once.
  3. Let stand 2 minutes.
  4. In a 4-cup glass measure, combine onions and butter.
  5. Cook on High 2 to 5 minutes until onion is translucent.
  6. Stir in sugar, salt and flour.
  7. Add half the milk.
  8. Cook on High for 2 minutes.
  9. Stir.
  10. Add remaining milk; cook on High for 2 minutes.
  11. Stir in sour cream, vinegar and Tabasco sauce.
  12. Cook at 50% power for 2 minutes.
  13. Drain potatoes and stir in sauce.
