Ingredients

  • 1 lb. boneless chicken breasts
  • 1/2 to 1 tsp. Creole seasoning
  • 1 medium yellow pepper, cut into strips
  • 1 medium green pepper, cut into strips
  • 1 medium red pepper, cut into strips

Instructions

  1. Cut chicken into strips of equal size, flatten if necessary.
  2. Sprinkle chicken with Creole seasoning and set aside to marinate for 15 to 30 minutes.
  3. Saute chicken quickly in margarine for approximately 5 to 10 minutes in a hot skillet.
  4. Add pepper strips and stir-fry over high heat until tender-crisp.
  5. Quickly add soy sauce and stir to combine.
  6. Serve with rice or noodles cooked in chicken broth.
