Ingredients

  • 1 large sweet potato
  • 1 1/2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup shortening
  • 1 egg
  • 1 cup milk

Instructions

  1. Boil and mash the sweet potato until free from lumps.
  2. Sift the flour, salt, and baking powder together.
  3. Add the mashed sweet potato and cut in the shortening until the mixture resembles coarse crumbs.
  4. Mix in the egg and milk to form a light dough.
  5. Roll out the dough a little thinner than ordinary biscuits.
  6. Cut into biscuit shapes and place on a baking sheet.
  7. Bake at 425°F (220°C) for about 12 to 18 minutes until golden brown.
  8. Serve hot with molasses.
