Sweet potato dumplings with tender sweet potatoes wrapped in biscuit dough, baked in a buttery sauce with a sweet cinnamon flavor, perfect for cozy family gatherings.

Ingredients

  • 10 biscuits
  • 2 cups sugar
  • 1 stick margarine
  • 10 slices raw sweet potatoes
  • 2 1/2 cups water
  • 2 tablespoons cornstarch

Instructions

  1. Roll out individual biscuits and place a thin slice of raw sweet potato on each.
  2. Pinch the dough together to seal the sweet potato inside.
  3. Melt 1 stick of margarine in a 9 x 13 inch pan.
  4. Place the dumplings pinched side down in the melted margarine.
  5. In a saucepan, boil water, sugar, cornstarch, and cinnamon until thickened.
  6. Pour the thickened mixture over the dumplings in the pan.
  7. Bake at 350°F (175°C) for about 30 minutes or until heated through and slightly golden.
