Sweet Potato Filled Orange Shells

Sweet potato-filled orange shells offer a delightful blend of citrus and warm spices, perfect as a nutritious appetizer or light dessert for family gatherings.

Ingredients

  • 4 fresh oranges
  • 1 (18 oz.) can sweet potatoes
  • 1/4 cup margarine, softened
  • 1/4 cup brown sugar
  • 1/4 teaspoon ginger

Instructions

  1. Cut oranges in half crosswise.
  2. Use a grapefruit knife to remove pulp from each orange shell.
  3. Arrange the orange shells on a glass serving tray and set aside.
  4. Remove the membrane from each orange section.
  5. Mash the sweet potatoes until smooth.
  6. Beat in the softened margarine, brown sugar, and ginger into the mashed sweet potatoes.
  7. Fold in the orange sections into the sweet potato mixture.
  8. Spoon the mixture into the orange shells, topping each with a little brown sugar and cinnamon.
  9. Microwave on high for 4 to 5 minutes.
