Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 3/4 cup cooked and mashed sweet potato
  • 2 tablespoons molasses
  • 1 teaspoon vanilla
  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Instructions

  1. Coat a 9 x 9-inch baking pan with spray.
  2. Line the bottom of the pan with wax paper.
  3. Coat the wax paper with spray and set aside.
  4. Beat eggs at high speed of electric mixer for 2 minutes.
  5. Add sugar, sweet potato, molasses, and vanilla to the eggs and mix well.
  6. In a separate bowl, whisk together flour, baking powder, cinnamon, ground ginger, and ground cloves.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake at 350°F (175°C) for 30 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before slicing and serving.
