Ingredients

  • 1 package Pillsbury hot roll mix
  • 1/3 cup wheat germ
  • 2 tablespoons sugar
  • 1 cup water (heated 120-130°F)
  • 3/4 cup mashed cooked sweet potatoes
  • 2 tablespoons margarine
  • 2 eggs

Instructions

  1. Grease two 8 to 9-inch round cake pans.
  2. In a large bowl, combine the hot roll mix, wheat germ, sugar, and the yeast from the foil packet; mix well.
  3. Stir in heated water (120-130°F), mashed cooked sweet potatoes, margarine, and 1 egg until the dough pulls away from the sides of the bowl.
  4. Put dough on a lightly floured surface, grease and flour your hands; shape the dough into a ball.
  5. Knead for 5 minutes until smooth, sprinkling with flour if the dough becomes sticky.
  6. Cover the dough with a large bowl and let rest for 5 minutes.
  7. Divide the dough into 16 equal parts and shape each into a ball.
  8. Pull the edges under each ball so the top is smooth.
  9. Place 8 balls on each greased pan, smooth side up.
  10. Cover with a towel and place in a warm area to let rise until doubled in size, about 30 minutes.
  11. Preheat oven to 375°F.
  12. Uncover the dough.
  13. In a small bowl, beat the eggs and water; brush this mixture over the rolls.
  14. Sprinkle with wheat germ.
  15. Bake for 20 to 25 minutes until golden brown.
