Ingredients

  • 1 lb. sweet potatoes
  • 1/2 cup yogurt
  • 1 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/4 tsp. mace
  • 3/4 cup miniature marshmallows

Instructions

  1. Cook the sweet potatoes until tender.
  2. Preheat oven to 350°F.
  3. In a small mixer bowl, combine cooked sweet potatoes, yogurt, cornstarch, salt, and mace.
  4. Beat on medium speed until smooth.
  5. Pour the mixture into a lightly greased 1-quart casserole dish.
  6. Top with miniature marshmallows.
  7. Bake for 30 minutes or until marshmallows are golden brown.
