Ingredients

  • 3 c. thinly sliced carrots
  • 1 (16 oz.) can cut sweet potatoes in light syrup, drained
  • 1/4 c. firmly packed brown sugar
  • 2 Tbsp. unsweetened orange juice
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. salt
  • 1/4 tsp. vanilla extract

Instructions

  1. Cook carrot slices in boiling water to cover for 15 minutes or until very tender; drain.
  2. Using a food processor, place the cooked carrots and drained sweet potatoes, brown sugar, orange juice, cinnamon, salt, and vanilla extract.
  3. Process until smooth, stopping to scrape down the sides as needed.
