Ingredients

  • 2 cups chopped cooked beets
  • 1/4 to 1/2 cup thinly sliced onions
  • 1 1/2 teaspoons salt
  • 2 cups chopped tart apples
  • generous grating of nutmeg
  • 2 to 3 tablespoons butter

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix together chopped cooked beets, chopped tart apples, sliced onions, salt, and a generous grating of nutmeg.
  3. If the apples are very tart, add 1 tablespoon sugar; if they are bland, add 2 tablespoons lemon juice.
  4. Layer the mixture in a greased casserole dish.
  5. Dot the top with butter.
  6. Cover and bake for about 1 hour.
