Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 1/2 cup walnuts, very finely chopped
  • 4 egg whites
  • 18 maraschino cherries, well drained and chopped fine
  • 1/2 cup shortening
  • 1/4 cup maraschino cherry juice
  • 2 teaspoons almond extract

Instructions

  1. Sift all-purpose flour, sugar, baking powder, and salt into a large mixing bowl.
  2. Cut in the shortening until the mixture resembles coarse crumbs.
  3. Combine milk and maraschino cherry juice, then add 3/4 cup of this mixture to the dry ingredients.
  4. Add vanilla, almond extract, and remaining cherry juice to the mixture.
  5. Beat the mixture on low speed for 2 minutes, or 200 strokes by hand.
  6. Add the remaining milk mixture and egg whites, then beat for another 2 minutes.
  7. Fold in finely chopped walnuts and well-drained chopped maraschino cherries.
  8. Pour the batter into two greased layer pans.
  9. Bake in a 375°F oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Frost with cherry frosting or your preferred icing.
