Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup boiling water
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 (15 oz) container ricotta cheese
  • 1 (8 oz) package cream cheese
  • 1 1/2 cups frozen strawberries, thawed
  • 1/2 cup sugar

Instructions

  1. Place gelatin in blender.
  2. Pour boiling water over it and let stand for 1 minute.
  3. Blend at high speed for 1 minute until gelatin dissolves.
  4. Add heavy cream, sugar, and vanilla extract.
  5. Blend at medium speed.
  6. Add ricotta cheese a little at a time and blend.
  7. Cut cream cheese into 1-inch cubes, add a few at a time while blending until smooth.
  8. Pour the mixture into a mold.
  9. Chill overnight.
  10. Unmold the dessert before serving.
