Ingredients

  • nonstick cooking spray
  • 4 large baking potatoes
  • 1/4 cup chopped parsley
  • 1 large clove garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper
  • 1 cup chicken broth
  • 1 1/2 cups grated reduced-calorie cheese

Instructions

  1. Grease a 1 1/2-quart baking dish with nonstick cooking spray.
  2. Pare and thinly slice the baking potatoes in a bowl.
  3. Toss the sliced potatoes to coat them evenly.
  4. Add chopped parsley, chopped garlic, salt, dried thyme leaves, and pepper into the prepared dish.
  5. Layer the sliced potatoes in the dish, alternating with some of the broth.
  6. Pour chicken broth over the layered potatoes.
  7. Cover the dish with foil.
  8. Bake at 400°F for 30 minutes.
  9. Remove the foil and bake for an additional 30 minutes.
  10. Sprinkle grated reduced-calorie cheese over the top.
  11. Bake until potatoes are tender, about 15 minutes.
  12. Sprinkle with remaining parsley before serving.
