Ingredients

  • 1 1/4 lb. leeks
  • 1 small onion
  • 1/4 c. butter
  • 1 3/4 lb. potatoes, peeled and quartered

  • 1 Tbsp. fresh chives
  • 1 tsp. chervil
  • 1 tsp. salt
  • 1/4 tsp. white pepper
  • 1 c. whipping cream
  • 1 c. whole milk

Instructions

  1. Chop the white part only of the leeks.
  2. Saute the leeks and onion in melted butter in a 3-quart saucepan over medium heat until the onion is tender, about 10 minutes.
  3. Stir in the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer, uncovered, for 45 minutes.
  4. Remove from heat and let cool slightly.
  5. Puree half the potato mixture in a blender at high speed until smooth.
  6. Transfer to a large bowl and repeat with the remaining potato mixture, then combine all.
  7. Stir in the chopped chives, chervil, salt, white pepper, whipping cream, and milk.
  8. Cover and chill thoroughly before serving.
  9. Serve cold or gently heat and serve warm.
