Ingredients

  • 1 (16 oz.) bag frozen vegetable combination (broccoli, carrots, cauliflower)
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1 cup shredded Swiss cheese
  • 1/3 cup sour cream
  • 1 (4 oz.) jar diced pimento, drained
  • 1 1/2 cups French fried onions
  • 1/4 teaspoon black pepper

Instructions

  1. Thaw and drain the frozen vegetables.
  2. Combine all ingredients except 1/2 cup cheese and 1 cup onions in a mixing bowl.
  3. Pour the mixture into a shallow 1-quart casserole dish.
  4. Bake, covered, at 350°F for 30 minutes or until vegetables are tender.
  5. Remove from oven and sprinkle with 1/2 cup shredded Swiss cheese and 1 cup French fried onions.
  6. Bake, uncovered, for an additional 5 minutes or until onions are golden brown.
