Tips & Substitutions

For a lighter texture, make sure your mashed potatoes are smooth and free of lumps. If you don't have shortening, unsalted butter can be used as a substitute, though it will alter the flavor slightly. You can also experiment with adding herbs or garlic powder to the dough for a savory twist. If you prefer a gluten-free version, use a gluten-free all-purpose flour blend.

Serving Suggestions

Serve these rolls warm alongside a hearty soup or stew for a comforting meal. They also pair beautifully with 'Everything Nice' Pecans for a delightful appetizer. For a festive touch, consider brushing them with garlic butter before serving. These rolls can also be sliced and filled with Cream Cheese-Raisin Sandwich Spread for a tasty snack.

Storage & Reheating

These refrigerator rolls can be stored in an airtight container in the fridge for up to 5 days. To reheat, preheat your oven to 350°F (175°C) and bake for about 10-15 minutes until warmed through. If you prefer a crispier exterior, you can also toast them lightly on a skillet.

Frequently Asked Questions

Can I freeze these refrigerator rolls?

Yes, you can freeze the rolls after they have risen and before baking. Shape them, place them on a baking sheet, and freeze until solid. Then, transfer to a freezer bag. When ready to use, let them thaw in the fridge overnight and allow them to rise before baking.

What can I use instead of mashed potatoes?

If you don't have mashed potatoes, you can substitute with sweet potato puree or even canned pumpkin for a different flavor profile. Just be aware that this may change the texture slightly, so adjust the flour accordingly to achieve the right consistency.

How do I know when the dough has risen enough?

The dough is ready when it has doubled in size, which usually takes about 1 to 2 hours. A simple test is to gently poke the dough; if it springs back slowly, it's ready. If it stays indented, you may need to let it rise a bit longer.
