A refreshing Middle Eastern tabbouleh featuring cracked wheat, fresh herbs, lemon, and vegetables, perfect for light lunches or as a vibrant side dish for gatherings.

Ingredients

  • 2 c. coarse cracked wheat
  • 3/4 c. lemon juice
  • 1 c. olive oil
  • pepper
  • 2 tomatoes, chopped
  • 1 tsp. salt
  • 1/2 c. parsley, minced
  • 1/4 c. mint, minced
  • 1/2 c. scallions, chopped

Instructions

  1. In a large earthenware casserole with a lid, put the cracked wheat and salt.
  2. Cover the boiling water and put the lid on while you prepare the other ingredients; leave covered for 45 minutes.
  3. Drain off excess water and toss wheat with chopped tomatoes, minced parsley, minced mint, chopped scallions, lemon juice, and olive oil.
  4. Leave it to marinate for an hour before serving.
