Instructions
- Mix water and bulgur together to moisten.
- Saute chopped onion in oil until translucent, then add to bulgur mixture.
- Set aside to cool slightly.
- Combine chopped green onion, parsley, and bell pepper in a bowl.
- Mix together remaining ingredients including tomato, lemon juice, and optional V-8 juice.
- Add the bulgur mixture to the vegetable mixture and stir well.
- Refrigerate the salad and let stand for at least 15 minutes before serving.
