A vibrant Middle Eastern salad featuring bulgur, fresh herbs, vegetables, and lemon, perfect for a light, flavorful, and healthy meal or side dish suitable for any occasion.

Ingredients

  • 1 cup medium bulgur
  • 1/2 cup water
  • 1 1/2 Tbsp oil
  • 1/2 onion, chopped
  • 1 cup chopped green onion
  • 1/2 cup chopped parsley
  • 1/4 cup chopped bell pepper
  • 1 small can V-8 juice (optional)
  • 1/2 cup tomato sauce
  • 1 small tomato, chopped
  • 1 lemon, juiced

Instructions

  1. Mix water and bulgur together to moisten.
  2. Saute chopped onion in oil until translucent, then add to bulgur mixture.
  3. Set aside to cool slightly.
  4. Combine chopped green onion, parsley, and bell pepper in a bowl.
  5. Mix together remaining ingredients including tomato, lemon juice, and optional V-8 juice.
  6. Add the bulgur mixture to the vegetable mixture and stir well.
  7. Refrigerate the salad and let stand for at least 15 minutes before serving.
