Ingredients

  • 1 cup cracked wheat

  1. Chop parsley and mint, stems and all.
  2. Place cracked wheat in a bowl; cover with warm water and soak for 10 minutes.
  3. Finely chop green onions and tomatoes.
  4. Drain cracked wheat and squeeze out excess water.
  5. Add the drained cracked wheat to the chopped vegetables.
  6. Mix lemon juice, olive oil, and salt together.
  7. Pour the dressing over the vegetable and cracked wheat mixture.
  8. Arrange on a bed of lettuce or serve as pita bread sandwiches.
