Ingredients

  • 4 medium peppers, cut in half lengthwise and seeds removed
  • 1 lb ground turkey
  • 1 package taco seasoning mix
  • 1 cup salsa
  • 1 can kidney beans, undrained
  • 1 cup chopped tomato
  • 1/2 cup sour cream
  • 2 oz sharp Cheddar cheese

Instructions

  1. Heat oven to 350°F (175°C).
  2. Place pepper halves in boiling water for 5 minutes; drain well.
  3. Arrange the pepper halves in a 13 x 9-inch baking dish.
  4. Meanwhile, brown the ground turkey in a skillet; drain excess fat.
  5. Stir in taco seasoning, kidney beans, and salsa; bring to a boil.
  6. Reduce heat and simmer uncovered for 5 minutes.
  7. Spoon the turkey mixture into the pepper halves.
  8. Cover the dish and bake at 350°F for 15 minutes.
  9. Top each pepper with one teaspoon of sour cream, one teaspoon of chopped tomato, and one teaspoon of shredded Cheddar cheese.
