Ingredients

  • 3 cups taco chips, crushed
  • 1 can (16 oz.) refried beans
  • 1 pound ground chuck
  • 1 package taco seasoning mix
  • 1 cup shredded lettuce
  • 1 large tomato, chopped
  • 1/2 cup grated Cheddar cheese
  • taco sauce

Instructions

  1. Crush taco chips in a paper bag, using a rolling pin to lightly go over chips 2 or 3 times.
  2. Place the crushed chips in a pie plate.
  3. Press refried beans against the taco chips using a wooden spoon to form a shell. Set aside.
  4. Brown the ground chuck in a mixing bowl.
  5. Microwave the meat on High for 8 to 10 minutes, stirring occasionally.
  6. Add taco seasoning mix and the recommended amount of water according to package directions.
  7. Microwave on High for 5 minutes until the mixture boils.
  8. Reduce microwave setting to Medium and cook for 3 to 5 minutes or until thickened.
  9. Fill the crust with the meat filling.
  10. Microwave on High for 3 to 5 minutes.
  11. Top with shredded lettuce, chopped tomato, grated Cheddar cheese, and taco sauce.
