Taco-Stuffed Potato

Ingredients

  • 1 medium sized baking potato
  • 1/4 lb. ground beef
  • 2 Tbsp. chopped onion
  • 1/4 c. bottled taco sauce
  • 1 to 2 Tbsp. shredded sharp Cheddar cheese
  • 1 to 2 Tbsp. dairy sour cream
  • diced tomatoes, shredded lettuce and shredded sharp cheese (for garnish, optional)

Instructions

  1. Scrub potato and pierce both sides.
  2. Place on paper towel in bottom of microwave oven.
  3. Microwave at High for 4 to 8 minutes or until skin feels soft, turning potato over after 2 minutes. Remove potato from oven.
  4. Let stand while meat sauce cooks.
  5. Place beef and onion in small (2 cup) microwave bowl.
  6. Microwave on High for 3 minutes or until beef loses its pink color and onion is tender, stirring and breaking up beef after 2 minutes.
  7. Drain off fat.
  8. Stir in taco sauce.
  9. Cut cross in top of hot potato.
  10. Fill with cheese and sour cream.
  11. Cover with meat sauce.
  12. Garnish with tomato, lettuce and cheese.
