  • 1 medium shallot, minced
  • 2 c. Cabernet Sauvignon or other hearty, dry, red wine
  • 2/3 c. heavy cream

Instructions

  1. Combine all spices: allspice, thyme, salt, black pepper, garlic powder, and dry mustard.
  2. Season the beef tenderloin medallions with the spice mixture and let stand for at least 2 hours.
  3. Heat vegetable oil in a large sauté pan or skillet over medium-high heat.
  4. Brown the medallions on both sides, then remove them from the pan and set aside.
  5. Add sliced mushrooms and minced shallot to the pan and sauté until tender.
  6. Return the beef medallions to the pan. Deglaze the pan with the red wine, scraping up any browned bits.
  7. Reduce the wine by half over medium heat.
  8. Remove the beef medallions from the pan and set aside.
  9. Finish the sauce by adding heavy cream to the pan, bring to a boil, and simmer for two minutes.
  10. Return the beef to the pan to reheat briefly, then serve with the sauce.
