Ingredients

  • 4 cups leftover turkey, cubed
  • 4 tablespoons butter
  • 2 cups milk
  • 3.5 tablespoons flour
  • 1 can peas, drained
  • 1 tablespoon sliced pimento (optional)
  • salt and pepper to taste
  • 6 biscuits or slices of light toast

Instructions

  1. Melt butter over low heat in a saucepan.
  2. Add flour and stir with a wooden spoon until smooth.
  3. Slowly add milk while stirring until the mixture is smooth.
  4. Stir with a wire whisk, then season with salt and pepper.
  5. Add the cubed turkey, drained peas, and sliced pimento (if using).
  6. Continue to stir over low heat until the sauce thickens and the turkey is heated through.
  7. Serve the turkey mixture over biscuits or slices of light toast.
