Ingredients

  • 1 egg
  • 4 Tbsp. oil
  • 1/3 c. milk
  • 2/3 c. water
  • 2 tsp. vanilla
  • 2 c. buttermilk
  • pancake mix
  • 4 Tbsp. sugar
  • 1 tsp. baking powder

Instructions

  1. Whisk egg, oil, milk, water and vanilla in a bowl.
  2. In a separate bowl combine pancake mix, sugar and baking powder.
  3. Gradually add dry ingredients to the liquid mixture, whisking until smooth.
  4. Heat a lightly greased griddle and pour 1/4 cup batter per pancake.
  5. Cook until bubbles form, then flip and cook until golden.
  6. Serve warm with your favorite toppings.
