Ingredients

  • fresh onions
  • fresh potatoes
  • fresh squash
  • fresh tomatoes
  • 1 or 2 cans green beans
  • 4 slices bacon
  • salt
  • pepper

Instructions

  1. Thinly slice the fresh onions, potatoes, squash, and tomatoes.
  2. Layer the sliced vegetables in a casserole dish, seasoning each layer with salt and pepper as desired.
  3. Arrange canned green beans evenly over the layered vegetables.
  4. Lay the bacon slices on top of the layered vegetables and green beans.
  5. Drizzle bacon drippings over the top of the layered ingredients.
  6. Cover the casserole dish with a lid or foil.
  7. Bake in the oven at 300°F (150°C) or less for about 2 hours, until the vegetables are tender and flavors meld together.
