Ingredients

  • 1/3 cup whole tapioca
  • 1/2 cup sugar
  • 2 cups milk
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla

Instructions

  1. In a saucepan, bring 1 quart of water to a boil and add tapioca; simmer for 1 1/2 hours.
  2. Drain the water from the cooked tapioca.
  3. In a double boiler, combine milk, salt, and drained tapioca.
  4. Cook until the tapioca becomes transparent, about 1 hour, stirring occasionally.
  5. Beat sugar into egg yolks and slowly stir into the tapioca mixture.
  6. Mix in stiffly beaten egg whites and add vanilla.
  7. Serve the pudding warm or chilled.
